Den økologiske vin er skabt i samarbejde med Italiens nok mest berømte 100-point-winemaker, Carlo Ferrini. Her er Carlo dog ikke købt på en kontrakt, der sender flaskeprisen til himmels. Han hjælper, fordi hans kone Gioia Cresti ejer Fontalpino.

“The first thing that needs to mentioned and also discussed is place, that being the clay and Alberese, 300-plus meters of elevation and uniqueness, even for the place within the place. There is a sanguine character plus blood orange and liquorice, some dried herbs and just a touch of balsamic. Truly complex sangiovese from this cru, now entering into its ideal drinking time. "Displaying a dark red color with a hint of magenta shining through, the 2018 Chianti Classico Gran Selezione Vigna Dofana is a spicy and layered wine with aromas unfolding to notes of red cherry liqueur as well as lifted notes of cranberry, fresh pine, crushed rosemary, and peppercorn. Medium to full-bodied, it offers a more structured side on the palate, with ripe but present tannins, vibrant acidity, a long, savory finish, and a saline and mineral-toned profile. Notes of orange zest come through on the palate as well, with herbs of amaro. This lovely, structured red is worthy of cellaring another year or two and drinking 2025-2045."

Chianti Classico Vigna Dofana Gran Selezione 2018 er fremstillet på 100% Sangiovese, der håndplukkes fra 2 hektar på det sydøstvendte terroir Dofana i Castelnuovo Berardenga. Mosten af økologiske dyrkede Sangiovese-druer gærer på store træfade med 23 dages udblødning af drueskallerne ved 28-30°C. Vinen fuldendes ved 18 mdrs. lagring på mellemstore franske tonneaux-fade samt 12 måneders kældermodning på flaske. Samlet produktion: 5.000 flasker.

Om Fontalpino

I hjertet af Toscana, nær den historiske by Castelnuovo Berardenga, finder vi Carpineta Fontalpino. Vingården drives af søskendeparret Gioia og Filippo Cresti og har navn efter de lokale Carpini-træer samt en kilde lige i nærheden. Kærligheden til naturen og terroiret præger også familiens vine, der alle laves på økologisk dyrkede druer. Samtidig lader vinmager Gioia Cresti druemosten spontangære (med naturligt forekommende gærstammer), da hun derved fremmer Castelnuova Berardenga-områdets særlige karaktertræk i sine vine. Alle Chianti-vine modner på mellemstore franske egetræsfade, og populært sagt placerer vinstilen sig mellem det traditionelle og det moderne. Det hører med til historien, at Gioia er gift med Italiens mest berømte vinmager, Carlo Ferrini, der som noget helt naturligt hjælper til med vinfremstillingen. Udover de flot anmeldte Chianti’er fremstiller Fontalpino bl.a. den barriquemodnede ”supertoscaner” Do Ut Des. Seneste skud på stammen er den spændende boblevin, Boulé: 90% Sangiovese og 10% Merlot, forkælet som en kostbar Champagne med hele 2 års flaskemodning på gærresterne!
